Empanadas (reg and keto)




Dough
Use my Keto pizza dough (minus the seasoning) or
Pie crust or Goya Empanada wrappers
1 egg
1 tablespoon water
2 teaspoons water

Filling
1 lb ground beef (or Turkey or chicken)
2 tablespoon taco seasoning
1 onion finely diced
1 tablespoon crushed garlic
1 cup Mexican Mix shredded cheese
Pam

Prepare the dough if making keto dough.
Pam a medium skillet.
Heat skillet on medium high and add the onion and garlic till tender and lightly golden.
Add the meat and seasoning, cooking till browned.
Make sure to crumble meat to bite size pieces as it cooks.
Drain excess oil or fat from the pan and turn off heat.
Fold in the cheese to hot meat.
Preheat oven at 425°
Lay the empanada wrappers out, if using pizza dough roll out 6 to 8 round pie shapes on parchment paper.
Dip a cooking brush in water a tablespoon of water.
Glaze the edges of the empanada wrappers with the wet brush.
Pour out excess water if any.
Load empanadas with about a tablespoon of filling don't over stuff, and smooth out the filling flat.
Fold over (in1/2).
Pinch the edges closed. Making sure they are sealed.
Add egg to the small bowl and whisk it along with 2 teaspoons of water making an egg wash.
Brush tops of each empanada with this egg wash.
Cook empanadas on parchment paper in oven for 18-20 minutes.
Cool slightly before serving.

Quarantine Crumble


Apple pie filling
Granola bars
Ice cream

2 tablespoons apple pie filling, heated.
Take one of the two granola bars (not both!) and crumble them on top of the heated apples.
Add a scoop of ice cream.
Serve and enjoy.

1 can of apple filling makes enough for a family of four, so enjoy this recipe while you are stuck inside together during the quarantine.

Apple Turnovers


1 can minced apple pie filling or homemade
1 tube crescent rolls
Cinnamon (if using canned filling)

Preheat oven to 400°.
Open both can filling and rolls.
Unroll the crescent rolls and separate them.
Place a spoonful of filling then sprinkle with cinnamon.
Place another crescent on top and pinch edges (so nothing leaks out) closed.
Bake for 10 to 11 minutes or until lightly browned.

Icing (optional)

2-3 tablespoon of milk
1/2 teaspoon vanilla extract
1 cup confectioners sugar

Mix and drizzle. 

*I didn't use icing because my family likes them without it.

Meatballs


3lbs ground beef
4 eggs (cracked)
3/4 cup fresh shredded parmesan cheese
3/4 cup shredded mozzarella cheese
2 tablespoons minced garlic
2 tablespoons parsley
2 teaspoon basil
2 teaspoon onion powder
1.5 teaspoon fresh ground pepper
1.5 teaspoon salt

Preheat oven to 400°.
In mixing bowl, use your hands to work all ingredients together.
Form equal size balls. (It should make about 60)
Place in a large greased baking sheet and bake for about 20 minutes or until they reach internal temperature of 160°.
Then serve or toss in with warm sauce.

*They last only 3-4 days in the fridge after they are cooked so I freeze mine. Use an airtight container such as a Ziplock bag to freeze them. 30 to a quart size bag, that's my family of 4 serving.

Grandmas Fried Cabbage


3 strips low sodium bacon
1 head cabbage
1 tablespoons dehydrated onions
1 teaspoon minced garlic
teaspoon salt

Chop bacon into bits.
Core and slice your head of cabbage.
Spray a large pot with nonstick cooking spray.
Heat your pot on medium high.
Cook bacon till crispy and remove all bits, leaving all the grease in the pot.
Then add the onion, garlic, salt and cabbage till tender about 6 to 8 minutes.
Turn off heat and add the bacon back into the cabbage mixture (mix well).
Serve and enjoy.

This would make a great substitute for those who don't care for corn beef and cabbage or those on Keto and want to join in St. Patrick's Day festivities.

😁Just a side note my picky eater loved this.

Last minute Valentine's Day Present



Mod Podge (super glossy)
Canvas
Map
Red Color Pencil
Scissors

Cut the map so it can wrap around the canvas.
Draw a heart around the city you met and color it in.
I made a index card out of scrapes stating the State and "Where we first met."
Glue down the index card to the map.
Place glue on the back of the map and glue it to the canvas (making sure to glue the wrapped parts down well) rub out any bubbles.
Wait for it to dry about 10 min.
Then brush it on the front of the map so it has a glossy finish.
*It won't cure for four weeks but it'll be dry enough to give in about a half hour.

Maple Ricotta Cake (Keto)


2 eggs
15 ounces ricotta cheese 
1/4 cup coconut flour
1/2 cup organic stevia blend sweetener 
1/4 teaspoon pink Himalayan salt 
5 drops maple extract 

Preheat oven to 350°.
Beat eggs and cheese together in med mixing bowl.
Add flour, sweetener, extract, and salt, making sure to mix till fully incorporated. 
Pour mixture into a greased 9 inch cake pan.
*Use a spatula to spread it evenly in pan.
Place on middle rack in oven and bake for 40-45min.
Let cool completely, and enjoy.
Store in fridge. 



*spread evenly before cooking.



Oh my goodness, it tastes like a rich macaron or center filling of a cannoli. Even the uncooked batter was tasty.
