Turkey Zucchini Tacos




Ingredients:
1lb ground turkey 1 zucchini per personTaco seasoningMexican cheese

Heat oven to 400 degrees
In a skillet brown up the ground turkey. Drain off excess grease & add taco seasoning. Slice zucchinis in half scoop put the seeds. Discard the insides or use them for something else. I use them in zucchini bread or you can compost them. Then put taco meat inside the zucchini, sprinkle cheese on top and place in the oven for 10 to 15 min, until the cheese is nicely browned.

These are from my garden and taste so much better than store bought maybe because I picked them right before cooking them. They were crisper and juicy, just make sure when you grab them at the store they are firm.
